A Yummy, Healthy, Gluten Free Stuffing Alternative

With Christmas fast approaching, I was trying to think of a healthy but yummy alternative to stuffing. Then the idea occured to me, why not prep for my stuffing the way I always do, but instead of adding dried bread cubes, add brown rice instead. The result? A success! In fact, I think it may become my new standby for all the holidays!

The ingredients are simple but add so much flavor! They include:

2 T Olive Oil

1 white onion, chopped

1 bag fresh cranberries

2 celery hearts, chopped

1 box Brown Rice

We always use cast iron to saute or cook meals on the stove. I chose a deep cast iron pan to prepare this dish.

1) Heat olive oil in the pan. Add the onion, cranberries, and celery. Saute until slightly tender.

2) Add 3 cups of water. Bring to a boil.

3) Add 3 cups of brown rice. Cover and reduce the heat to medium.

4) Fluff with a fork. The rice may turn a slight pink but all the merrier and bright! Right?
