A gluten free wrap to die for!

First, I want to set the record straight. I don’t have celiac disease nor am I gluten intolerant. . . in the traditional way of thinking. However, after talking to my doctor a little over a year ago and telling her about my joint pain, she suggested I try gluten free.

Whoa! That wasn’t what I expected to hear! But I was glad she didn’t jump right to a medication because that wasn’t what I was looking for either. So, being the analytical I person that I am, instead of rushing right off to the grocery store, I decided to do some research. I was quite amazed at what I learned about the effects of gluten on the body. I gave it a try and felt great! So great, in fact, that I decided it probably was fine to try add a little gluten back into my day after several months of total gluten free (which is one approach to going gluten free and then re-introducing).

However, after about 6 months passed, I started to feel more fatigued again, my joints hurt, and I had more cravings for carbs (which had all but disappeared when I was gluten free). I decided to try gluten free once again and yep, I feel so much better!

But enough about that, let’s get on to this wrap! The great thing about the time we live in now is the gluten free items that are available are quite tasty! Check these out! I eyed them in the store and decided to give them a try. Love them!!! They are going to be in my lunch every day this week!

Here’s an easy wrap recipe:

Step 1: Peel wrap from paper.

Step 2: Spread Roasted Garlic Cashew and Almond dip on wrap

Step 3: Add spinach, avocado, and feta cheese.

Step 4: Wrap! The nice part of these is that if you add a little water to the edge, it actually creates a seal and sticks to itself so you don’t have a wrap that falls open!

Step 5: Add gluten free crackers and kiwi for the perfect lunch!
